🌱 Carly Paige Will Simply Swap Your Meal

“I believe that we all have the power to live our best life through healthier choices and a grateful perspective,” says Carly Paige, the chef who operates FitLiving Eats. She strives to make healthy simple by getting rid of the “rules” and restrictions we place on ourselves.

“Being healthy doesn’t have to be hard with the right tools, knowledge and accountability.” Carly clarifies.

Carly runs a virtual kitchen where she writes about nutritious recipes, most of which are plant-based. She is also the author of the Simply Swapped Everyday cook book, which is a guide to elevating meals with easy plant alternatives for unhealthy items. She encourages people to center their meals around plants, even if there’s meat on the plate.

We were invited to a cooking class event she hosts to see how we can incorporate more plant-based materials into our diet. Here’s what we made:

 
 

Jarred Salad

The perfect way to bring a healthy lunch to work is through making a jarred salad. Carly introduced us to fresh ingredients provided by Sprouts Farmers Market and the technique of salad-layering to prevent the dressing from getting to the lettuce in a to-go jar.

Cauliflower Steak

Slicing entire heads of cauliflower is how these steaks are made. A variety of seasoning added flavor to the steak, while we also made kale dressed in vinaigrette and sunflower seeds as the side.

Overnight Oats

The cooking class followed us into breakfast the next day with overnight oats that we got to take home. The oats featured chia seeds, carrots, and almond milk; only ready for eating the next morning!
